Holidays on the Grill - Chef Luis's Sweet Potato Casserole Recipe

This holiday season, try preparing your holiday meals on a Hestan grill for a unique culinary experience that will leave your guests wanting more. 

 

Try this delicious sweet potato casserole recipe from Luwa's in-house Chef Luis Rodriguez. This is sure to become a holiday staple in your home!

 

 

 

Sweet Potato Casserole Ingredients

  • Sweet potatoes:

  • 2 1/2 pounds whole sweet grilled potatoes

  • 3 tablespoons butter

  • 2 large eggs beaten

  • 1/4 cup maple syrup

  • 1/3 cup milk

  • 1/2 teaspoon vanilla extract

  • 1/2 teaspoon salt

  • 1/4 cup Pistachio chopped roasted pistachios

  • 1/4 cup light brown sugar

  • 1 cup marshmallows 

 

 

 

 

 

Sweet Potato Casserole Preparation 

  • Preheat the grill to medium-low.

  • Put whole sweet potatoes directly on grill and close door.

  • Grill until knife can pierce potato with no resistance.

  • Remove, peel and mash.

  • In a large bowl, mix together the sweet potatoes, butter, eggs, maple syrup, milk, vanilla extract, salt, Pistachio and brown sugar.

  • Mix until smooth.

  • Transfer to a baking dish.

  • Sprinkle the small marshmallows over the sweet potato mixture.

  • Grill for 30 minutes, or until the topping is lightly brown.

  • Finish off using the infrared rotisserie burner (or a broiler if your grill does not have this feature)
