Holidays on the Grill - Chef Luis's Sweet Potato Casserole Recipe

Sweet Potato Casserole Ingredients
Sweet potatoes:
2 1/2 pounds whole sweet grilled potatoes
3 tablespoons butter
2 large eggs beaten
1/4 cup maple syrup
1/3 cup milk
1/2 teaspoon vanilla extract
1/2 teaspoon salt
1/4 cup Pistachio chopped roasted pistachios
1/4 cup light brown sugar
1 cup marshmallows
Sweet Potato Casserole Preparation
Preheat the grill to medium-low.
Put whole sweet potatoes directly on grill and close door.
Grill until knife can pierce potato with no resistance.
Remove, peel and mash.
In a large bowl, mix together the sweet potatoes, butter, eggs, maple syrup, milk, vanilla extract, salt, Pistachio and brown sugar.
Mix until smooth.
Transfer to a baking dish.
Sprinkle the small marshmallows over the sweet potato mixture.
Grill for 30 minutes, or until the topping is lightly brown.
Finish off using the infrared rotisserie burner (or a broiler if your grill does not have this feature)
